Lucy’s Poached egg brunch on bed of Bulgar wheat & wilted spinach
- 1 teasp of butter
- 1 shallot
- 1 chilli (or less according to level of heat you like)
- 1 teasp ground turmeric
- 1 or 2 garlic cloves as per your liking
- Sea salt, black ground pepper
- Big Fistful of spinach
- 1 slice of porridge bread or a ½ cup of bulgar wheat (already prepared) or brown rice
- 1 egg or protein of choice
Set out all of the above ingredients
Put a full cup of boiling water into a pot and return to the boil
Add a quarter cup of bulgar wheat into the water, stir, return to the boil then immediately turn to a low simmer, cover & simmer gently
OR Use precooked bulgar wheat for convenience
Finely chop your shallot, garlic cloves & chilli
Wash your spinach, & roughly chop
Put the kettle on to boil for your poached egg
Crack open your egg into a small bowl ready to slicde into your pot of near boiling water
Measure out turmeric
Put egg on to simmer gently to poach for 3 minutes
Melt butter or oil on pan
Add chopped shallot, chilli, turmeric, garlic, salt & pepper, sweat gently for a minute
Add spinach or any veg of choice, wilt or soften gently, towards the end add in bulgar wheat to reheat, keep separate or mix together on pan
Plate up bulgar wheat, topped with spinach, topped with poached egg
Season with black pepper and sea salt
